On Saturday, December 8th, 2007, Karl and I had our first adoption fundraiser. It was a “Traditional Southern Barbeque with an Asian Theme”. The idea to have a barbeque fundraiser came from our good friend Angie H. Angie’s aunt and uncle, Tracey and Lewis M., raise hogs and run a catering business, Big Hawg Catering, outside of Raleigh. They donated all of the meat, their award winning sauce, traveled all the way from Raleigh, and spent the entire day cooking in the kitchen. We will never be able to thank them enough for their incredibly generous donation of time, talent, and treasure.

Many other friends helped to make our barbeque fundraiser a success as well. Angie’s husband Eric, her parents Tony and Harry, and her “Pa-Paw”, all helped to cook and serve. Michelle W., a member of our parish, got 40 pounds of creamy cole slaw donated from the food vending company that she works for. Mr. and Mrs. Moore purchased the southern favorite, red slaw, for us. Leigh Ann N. made beans. Lee F. made his delicious hush puppies. The Catholic Daughters donated desserts and iced tea. Monica L. donated several desserts, as well as, paper products. My parents, Linda and John H. bought the tablecloths and other paper products. Our neighbor Alfonso G. brought many bags of ice and spent several hours hanging the Chinese dragon piñata. Charlotte G. donated many beautiful items that we raffled off. Chris B., the Youth Minister at our Church, signed several members of the Youth Group to help sell tickets. Chris also helped to serve in the kitchen. One of my Advanced Art students, Jean, came dressed in a traditional Korean outfit and spent the entire day helping us and entertaining the children by reading to them Asian Folk Tales. Also, our friends’ children were a big help, they helped to set-up, glued the feet back on the Japanese lanterns, and spray painted the Chinese dragon piñata.

The barbeque started at 11 am and ended at 6pm. We decorated Helfrich Hall in a red, white, and black theme, put the Japanese lanterns on the tables, and had Classical Chinese music playing in the background. We had a pretty steady flow of guests most of the day and were extremely busy at lunch time. Many of the staff members at my school, N. F. Woods, donated money if they could not attend or they placed an order for delivery. Mary K. and her husband graciously drove from Mooresville to pick-up several orders and brought them back to school for those who could not make it out to Salisbury. We had friends from Rowan Regional Hospital, Rowan EMS, my new Jiu-Jitsu Academy, Fight to Win, and many members of Sacred Heart Parish, come out to support us. In total, we served over 120 people, and sold out of almost everything. It was truly a successful fundraiser. Karl and I cannot thank all of you enough for all of your help, support, and prayers. We are very lucky to have such caring and giving friends, and to be members of such a loving Parish family. Thank you all from the bottom of our hearts!
