October is behind us,
and we are one month closer to our future daughters and sons in
China! Every sweet face you've seen during the past nine
days represents a dream come true for their family . . . in some
cases, dreams come true! Waiting families: Hold on to your dream!

"Here is a favorite recipe for a very
easy cake to make with the wonderful apples most of us pick in
the fall!"
Tom's Apple Walnut Cake
4 cups apples, peeled and chopped
2 cups sugar
2 cups of flour
2 eggs
1/2 cup canola oil
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1 cup walnuts
Combine apples and sugar and let sit 45 minutes.
Preheat oven to 350 degrees and grease and flour a 9 x 13 pan.
Combine eggs and oil in a small bowl and set aside. Sift
together dry ingredients in a mixing bowl. Add egg and oil to
dry mixture and mix until smooth. Combine with apples and then
add walnuts. Spread in pan and bake 50 to 60 minutes.
